Mangalore Bajji-A Nice snack

This is a starter/evening snack. Ingredients: All purpose flour/Maida- 1cup Onions- 2- finely chopped Greenchillies-2 finely chopped Ginger- small piece- finely grated. Salt- as needed Oil- to fry Mix all the ingredients including salt and mix well adding little water. It should be a tight dough. Take a cup of water and keep aside. Wet your hands and take a small portion of the dough, make a ball and make a small patty. Heat oil in a pan and once the oil is hot, add the patties one by one and deep fry both sides. This can be served with Tomato sauce/any chutney

Ragi Mudda/ Ragi Balls

Ragi/Finger millet flour is available widely in India and also in countries like Malaysia/Singapore. This recipe is from Karnataka state of India. Recipes involving Ragi are good for curing/controlling Diabetes. Here is a quick recipe. It took less than 15 minutes to prepare this. Ragi Balls with Brinjal Gothsu Ingredients: Ragi flour- 1 cup Salt- as needed Cooked rice- 1/4 cup Soak Ragi flour in water for about 4 hours.  In a wide bottomed pan, add Ragi Flour batter, add salt and mix well. Add 1 glass of water and cook it. Keep the stove in slow flame, add the cooked rice (mash it before adding). Mix well and add 2 tbsp of oil and keep mixing well. Once all water evaporates, switch off the stove and make the balls. This can be served with Sambar/chutneys.
