Tomato Dosa

Ingredients: 1. Raw rice- 1.5 cup 2. Chopped tomatoes- 1/4 cup 3. Red chillies-4 or green chilli (1 or 2) 4. Toor dhal- 2 tbsp 5. Tamarind- 1 small pinch 6. Salt Soak rice for about 2 hours and grind with all other ingredients adding lil water. Then, make dosas by spreading batter from the corner first and then spread to center. This was our breakfast this morning.

Kerala Mango Gravy

This is a speciality item of Kerala. Goes well with Idiappam or Aapam. Ingredients: 1. Raw Mango- 1 finely chopped 2. Green chilli-1 finely chopped 3. Coconut oil- for sauting 4. Coriander powder, Turmeric powder 5. Chilli powder 6. Red chillies-3 7. Onion- 1 big- finely chopped 8. Coconut- Grated and grinded 4 tbsp 9. Mustard & curry leaves 10. Salt In a pan, add 2 tbsp of coconut oil and add 1/2 tbsp of mustard seeds, red chillies and 1 handful of curry leaves. Once the mustard starts splattering, add green chillies and then add onion and fry well. Add 1/4 tbsp of turmeric powder, 1 tbsp of chilli powder, 2 tbsp of coriander powder and mix well. Add the raw mango pieces and mix well and cook simmer for 2 mins and add salt. Then, add the grinded coconut and add 1 glass of water. Let this cook to a gravy consistency. Kerala Mango curry !

This is a typical traditional Tamil dish and it is a speciality food served with coconut milk/kadalai curry/ kuruma in the hotels. The shape is like a pan, and it is pure white in color. We need to have a Aappam pan for this (wok with a lid). Ingredients: 1. Raw rice- 2 cup 2. Idli rice- 2 cup 3. Urad dhal- 1/2 cup Soak all the above together for 3 hours and grind adding salt. Then, leave it for about 18-20 hours. Take grated coconut measuring about 1/2 of a medium sized coconut . Grind the coconut in a blender and extract the milk. Add 5 tbsp of sugar, 1/4 tbsp of baking soda and 1 cup of coconut milk to the batter. In a wok, add oil to all sides and pour the batter in the center and quickly hold both ears of the wok and turn in all sides. Cook in low flame, with the lid. No need to turn and cook like other dosas. Once the aapam is cooked, you can easily transfer it to a plate. This was our breakfast this morning and was very good :)-

Veg.Manchurian Balls- Chinese Vegetarian

Ingredients: 1. Carrot- Grated- 1-2 numbers 2. Cabbage- chopped finely- 1/4 cup 3. Capsicum- chopped finely-1 4. Beans- 1/4 cup- chopped finely' 5. Garlic- 4 pieces 6. Green chillies-2-3 chopped 7. Corn flour- 1/2 cup 8. Maida -1/2 cup 9. Ajinomoto-1/2 tbsp 10.Soya sauce-2 tbsp 11. Salt as reqd. Spring Onions for garnishing only. Mix all of the above mentioned items and make small balls. Deep fry in oil. Garnish with spring onions and serve.

Chilli Garlic Fried Rice- Chinese style...

Ingredients: 1.Basmati Rice- 2 cups 2.Soya sauce- 2 tbsp 3.Ajinomoto- 1/2 tbsp 4.Spring Onion- chopped- 1 handful 5. Red chillies- 8 4. Garlic- 4 pieces 5. Salt and Oil- As required Procedure: 1. Cook basmati rice, in an open pan, adding 1-2 tbsp of oil. Drain excess water and keep the rice ready. 2. Now, grind garlic and 3 red chillies. In a pan, add oil and add this ground mixture and fry well. 3. Then, add the soya sauce, remaining red chillies (by cutting them into small pieces), ajinomoto,rice and add salt. This is the typical chinese style fried rice.

Andhra Paruppu Podi...

My husband likes the paruppu podi served in Andhra restaurants. Managed to find thee recipe for this finally. Ingredients: 1. Roasted Gram (Dhalia) or Pottu kadalai- 1/2 kg 2. Garlic (with skin)- 4 pieces 3. Red chillies- 10-15 numbers 4. Salt as per taste. Dry roast Dhalia. Add 2 tbsp of oil and add garlic, red chillies and handful of curry leaves and fry.Let them cool. Grind them in a mixie and add salt.

Tomato Rice...

Ingredients: 1. Rice- 1 cup 2. Fully ripe tomatoes- 3-4, chopped finely. 3. Turmeric powder-1/2 tbsp 4. Chilli powder- 1 tbsp 5. Cinnamon stick, bay leaf-small portion. 6. Oil, mustard seeds, curry leaves and salt. In a pan, add oil, and add mustard and curry leaves. Then, add the cinnamon stick and bay leaf. Add tomatoes and add turmeric powder, chilli powder and salt. When the tomatoes are getting nicely cooked, add 1 tbsp of gingelly oil and salt. Mix with rice. You can eat this with Pappadam

Banana Stem Curry and free wicks for the oil lamps...!

Hi, Banana stem helps to avoid kidney stones and is recommended to be consumed once/week atleast. I bought banana stem and cleaned it and cut into very small circles first. The thread like things inbetween one layer and another can be rolled and used as wicks for the oil lamps. These last longer like the cotton wicks! I then chopped these small circles finely. In a pan, added oil, mustard seeds and curry leaves, added banana stem and 1/2 tbsp of turmeric and half glass water and let this cook in medium flame. Once this got cooked, I added grated coconut and salt. Vazhaithandu curry!
