Upuma Kozhakkattai (உப்புமா கொழுக்கட்டை/உப்பு உருண்டை)

This recipe has stood the test of time and is mostly home made and fits all age groups as it is a steamed food. This can be a good dinner option on a rainy night. Ingredients: 1. Rice- 2 cups (not the idli rice- usual cooking rice like Ponni Parboiled Rice is okay) 2.Mustard- 1 tbsp 3. Curry leaves-a handful 4. Red chillies- 5 or 6 5. Asafoetida(Hing)- 1/2 tbsp 6. Salt to taste 7. Sesame Oil- 2 tbsp Wash the rice twice and grind it coarsely in a blender. Take a thick bottom pan, add oil, mustard seeds, curry leaves, red chillies and hing. Once the mustard seeds start popping, add 6 cups of water (1 cup of rice would need 3 cups of water for this recipe). Add salt. When the water starts boiling, add the rice that was blended earlier and keep stirring until all the water has drained. Cool for 5-10 mins. In an idli mould, grease with sesame oil take a handful of this mixture and make the kozhakkattai/dumpling by applying pressure with your fingers. Steam for 10 minutes. This can be served...

Uppuma Kozhakkattai -Yummy!

This is a steamed dish, and is usually not available in hotels. Served with Idli Podi. Ingredients: 1. Raw Rice- 1 cup 2. To saute: Mustard- 1/2 tbsp, 3 red chillies, 1 handful of curry leaves 3. Coconut pieces- 1 handful Rinse the raw rice and set aside for 20 min. Add 1/2 tbsp of salt and mix well. Grind this in the blender until it is in Sooji consistency ( No need to grind to a fine powder). In a pan, add oil, add mustard, red chillies (split into two), curry leaves (tear them before putting). Once these start splattering add 2 cups of water, add required amount of salt. When the water starts boiling, add rice powder and mix well, so that there are no lumps. Once all the water has evaporated, switch off the stove. Once this cools, make balls and steam this for 1-2 whistles.
