Aapam hai acha hai.. :)-


This is a typical traditional Tamil dish and it is a speciality food served with coconut milk/kadalai curry/ kuruma in the hotels.

The shape is like a pan, and it is pure white in color. We need to have a Aappam pan for this (wok with a lid).

Ingredients:
1. Raw rice- 2 cup
2. Idli rice- 2 cup
3. Urad dhal- 1/2 cup

Soak all the above together for 3 hours and grind adding salt.

Then, leave it for about 18-20 hours.

Take grated coconut measuring about 1/2 of a medium sized coconut . Grind the coconut in a blender and extract the milk.

Add 5 tbsp of sugar, 1/4 tbsp of baking soda and 1 cup of coconut milk to the batter.

In a wok, add oil to all sides and pour the batter in the center and quickly hold both ears of the wok and turn in all sides.

Cook in low flame, with the lid. No need to turn and cook like other dosas. Once the aapam is cooked, you can easily transfer it to a plate.
