Nuchinunde- Another Easy Snack (நுச்சின உண்டே-எளிதான பருப்புக் கொழுக்கட்டை)

  1. Moong dhal- 1 cup 2. Channa dhal- 1 cup 3. Toor dhal- 1 cup Soak all three dhal together for 3 hours. Grind coarsely without adding water. Add 1 cup of grated coconut to this mixture. Add 1 tbsp of Cumin seeds, 4 tbsp of grated coriander leaves, 2 finely chopped green chillies and a pinch of ginger. Add 1/2 tbsp of Turmeric powder and a pinch of hing. Add salt and mix well. Make small balls and steam them in the idli cooker for 15 minutes. Nuchinunde will be ready to serve. This is served with 2 tbsp of hot ghee.

Aapam... A really special kind of dosa!

Ingredients: 1. Parboiled Rice- 2 cups 2. Idli Rice- 2 cups 3. Urad dhal- 1/2 cup 4.Venthayam-3 tbsp (Fenugreek) Procedure: Soak both the rice together. Soak Urad dhal and Venthayam together. Let both soak for 4 hours. In the wet grinder, add urad dhal and venthayam after removing excess water. Once it is finely blended add the rice and let it grind to a fine paste. Adding water is purely based on your judgement. This has to be left overnight to ferment. If you have a pan with lid, you can make appam. You can get special pans to make this too. Let the pan get hot. In my case, it was a non stick pan so no oil is needed. Add the batter in the center. You have two options a. Hold both sides and rotate the pan clockwise. The batter will spread in all sides. b. Use the ladle to spread. I have used the second option to get a flowery Aapam. This can be served with coconut milk. Tawa Idli

This is  a nice snack that can be easily prepared with home made dosa batter. For about 1 cup of dosa batter, add 2 spoons of Sooji. Let it remain for 10 mins. In a pan, add Idli powder and oil generously and wait for the tawa to be hot. Then, pour small lumps of batter. Do not spread like dosa. Lower the flame and cook with a lid on top. Do not turn this. It will be crisp in one side and soft on the other side. Tawa Idli is delicious and it can be followed with a hot cuppa of coffee/tea.

Poha Kaara Saara Bath!

This is a simple variation for Poha Ingredients: 1 cup Poha, 1 gooseberry size tamarind soaked in water, salt as needed, oil as needed curry leaves, 2 tbsp of coconut,  3 green chillies, 2 tbsp of Roasted gram (Dahlia) Wash and soak Poha in about 2 cups of tamarind water for twenty minutes. In a pan, add oil, mustard seeds and curry leaves. Grind the coconut, green chillies and roasted gram. Add the poha and the blended mixture. Lower the flame and add salt. This is a simple breakfast recipe that is ready in less than ten minutes.

Soft Idlies.. the real secret

The secret for soft idlies is the ingredients. 1.Idli rice - 4 cups 2.Fenugreek seeds - 2 tbsp 3.Urad dhal- 1 cup 4.Rice flakes ( Poha)-  1 cup Procedure: 1.Soak rice and fenugreek (methi/venthayam) together 2.Soak Urad dhal and rice flakes in separate bowls. All these should soak 5 hours. Rinse the ingredients only before grinding. Grind half of the rice and methi first for ten minutes. Then add remaining rice and rice flakes. Use wet grinder to grind. Add around 3/4 cup of water in multiple intervals ,few tbsps each 5.Take out the rice mixture. 6.Add urad dhal and grind it finely. You will need around half cup water added little by little 7.Grind urad dhal longer and that will give the best idlies 8.Mix the two batters. Add salt and mix well with hands multiple times 9.Split the mixture into two and store in two buckets having more than half space for the batter to rise. 10.Idlies can be made after greasing the idli moulds with sesame oil. முக்கூட்டு தோசை (a) Veg. Omlette

Ingredients: 1.Besan- 1 cup 2.Rice flour- 1 cup 3.Maida- half cup 4.Curry leaves 5.Cumin seeds- 1 tbsp 6.Salt and water- as needed 7.Onion and tomatoes- finely chopped ( 2 each) optional 8.Green chillies- 2 finely chopped ( optional) Procedure: 1.In a mixing bowl add all the flour and mix well. Use a whisk or handheld mixer to mix without lumps and get the required consistency. 2.Add salt and water 3.Add the chillies,cumin,curry leaves, onion and tomatoes to the mixture 4.Heat up dosa pan and make a dosa with one laddle of batter. 5.Cook both sides and serve.

Saamai Idli ( Little Millet Idli)-சாமை இட்லி

This is an idli recipe without rice as well. Helpful for controlling diabetes. Ingredients: 1.Saamai or Little Millet - 3 cups 2.Urad dhal - half cup 3.Fenugreek or Methi seeds- 3 tbsp Procedure: 1.Soak all ingredients separately for 5-6 hours. 2.Grind millets and fenugreek first after rinsing them some times 3.Add urad dhal and grind well 4.Add salt and let the batter ferment overnight. 5.Grease idli plates the following morning and fill the batter and steam for ten minutes. 6.Delicious Samai idlies are ready. This batter is good for crispy dosas but the batter tends to become sour after a day.

Kudalai Idli ( Moong dhal Idli)-குடலை இட்லி

Soft idlies can be made using moong dhal too. Ingredients: Moong dhal - 2 cups Urad dhal- 1 cup Procedure: 1.Soak both dhals separately for 2-3 hours. 2.Grind to a fine batter 3.Add salt and mix the batter well 4.Let it ferment overnight 5.Grease idli moulds ,add batter and steam for ten minutes Hot idlies are ready. This batter is good for one day only.

Thinai Arisi (Fox Tail Millet) Upuma

For the weight watchers or folks trying to control Diabetes, here is an alternative recipe that is rich in proteins, anti oxidants and Vitamin B12. Ingredients: 1. Fox tail millet- 1 cup 2. Onion- finely chopped (2) 3. Green chilli- finely chopped(2) 4. Mustard seeds- 1/2 tbsp 5. Curry leaves- few strands How to make to Thinai Arisi Upma? 1. Roast the fox tail millet in slow flame until you get the aroma. Wash multiple times until the fox millet is clear. 2. Now, in a wide bottom pan, add 1 tbsp of oil and add mustard seeds, curry leaves. Once the mustard starts splattering, add onion and green chillies. 3. Keep stirring until onion changes color. Then add 3 cups of water. Add around 1/2 tbsp of salt. 4. After the water starts boiling, add the millet and stir well. Cover the vessel and cook in slow flame. Ragi Adai (Finger millet spicy pancake)

Though this recipe is not attractive in appearance, it is very rich in fibre and it is very tasty with the spices. To make this breakfast item, we need Ragi flour- 1 cup Ginger and Garlic- (grated)- 3 tbsp curry leaves a handful Small onion (Shallots)- finely chopped- 1 handful. Salt as needed Chilli powder- 1/2 tbsp Murungai (Drumstick tree leaves)- 2 handful- nicely chopped Mix all the ingredients in a wide bottom vessel. Add only around 1/2 cup water. This should not be too watery. It should be more like dough for chapathi. Heat up the pan and spread a handful of this batter and let it cook well. Turn to another side. Add oil when cooking both sides. Serve hot with Tomato chutney. Neer Dosa

Neer Dosa is a recipe I picked from a TV show of Mr.Venkatesh Bhat. My mother usually makes Rice Adai. But Neer dosa has more coconut, batter can be watery and it is very soft. Ingredients: Idli Rice: 3 cups Grated coconut: 3/4 cups (I used half of a big coconut). Soak Rice for about 4-5 hours. In a wet grinder, grind the rice and the grated coconut together adding about 1 glass of water. Add required amount of salt and 1 spoon of sugar. This dosa can be made immediately (does n't need fermentation) and can be served with any spicy chutney/sambar/curry. Here, I have shown you with Chettinad Kaara Kuzhambu. Kara Kuzhambu
