Capsicum Chutney

Ingredients: Capsicum- 1 or 2 Channa dhal- 1 tablespoon Urad dhal- 1 tbsp Red chilli- 1 Wash and cut the capsicum into slices and add oil in a pan and fry the capsicum with the dhal. Cool and grind the ingredients adding salt. You can saute with mustard and curry leaves. This is a nice variation from the usual chutneys.

Mint Pottukadalai chutney... (when chutney jar crashed)!

So far, I did not try grinding Mint with Dhalia (Pottukadalai). My chutney jar crashed and I had no choice but to use the bigger jars. This went well with Idlies today for morning breakfast. Ingredients: 1. Mint leaves- 2 handful 2. Green chillies- 2 3. Dhalia- 1 handful. In a pan, add 1-2 tbsp of oil and add the washed mint leaves. Toss it for a minute and let this cool. Add green chillies, mint leaves and dhalia and grind adding salt. Saute with mustard seeds and curry leaves.

Please refer to my chutneys post for the complete list.. Some additions that I missed. 1.Pottukadalai- Onion chutney: For some, who should avoid coconut, this chutney is ideal. Cut 1 big onion and grind this with a handful of pottukadalai, 2-3 green chillies and salt. 2. Tomoto/Channa Dhal chutney: Dry roast channa dhal (2-3 tbsp) in a dry pan and soak it in water.Add 1 tbsp of oil in a kadai and fry 2 tomatoes and 3-4 red chillies. Grind these together and add salt. 3. Three dhal chutney: In a pan, add 1-2 tbsp of oil and add 2 tbsp of channa dhal, 2 tbsp of toor dhal and 2 tbsp of moong dhal and add 1/2 cup of coconut, 3-4 red chillies and switch off the stove. Let this cool. You can grind this adding salt and use it for idli/dosa. 4. All green chutney: In a pan, add oil, add 1 tbsp of channa dhal, 3-4 red chillies, 1 small piece of tamarind and let this fry. Now, add 1 handful of mint, 1 handful of curry leaves and 1 handful of coriander and 1/2 cup of coconut and fry for 2-3 minute...

Spicy Simple Chutney.. in 2 mins

1.Peel 8-15 small onions. 2.Grind these with a small lemon size amount of tamarind, 5-6 red chillies and salt. Tastes good with Idly/Dosa. Simple to make.

Chutneys for Dosa/Idli

1 Onion Chutney :In a dry pan, add oil, handful of urad dhal, 4 red chillies, and 1 raw onion (chopped) and fry. Grind all these with salt. Season with mustard seeds. 2 Onion Thokku Grind 1 raw onion, 3-4 red chillies in the mixie with little tamarind (1 pinch). Add oil in a pan, add mustard seeds. Once mustad starts splattering, add the ground mixture and let this cook. Adding lil gingelly oil will improve taste. Add salt once the mixture has cooked well 3 Tomato Chutney Add lil oil in a pan and add two chopped tomatoes, one handful of curry leaves, lil ginger and few red chillies. Once all the ingredients are cooked, grind them and add salt. Saute with mustard seeds 4 Coconut Chutney Grind 1 cup of grated coconut, 1 cup of split channa dhal (pottu kadala) and 4 green chillies. Grind these in mixie and add salt. Saute with mustard seeds 5 Coriander Chutney Clean the green coriander removing the stem.
