Ragi Mudde and Saaru (without onion garlic) ராகி முத்தே

 This recipe of Finger millet balls is from Karnataka, while the Saaru is my own customization. This is fiber rich and helps to control diabetes How to make Saaru? 1. Pressure cook a cup of Moong dhal for 4 whistles. 2. In a pan dry roast 1 tbsp of cumin, 1 tbsp of pepper corns, 2 red chillies, 3 tbsp of grated coconut, 1 tbsp of Coriander seeds and blend them in a mixer. 3. Mash the Moong dhal, add the spice mixture and add another 2 cups of water. 4. Add required amount of salt 5. Saute with Mustard seeds and curry leaves. How to make Finger Millet balls? 1. I took 1.5 cups of Ragi flour to get around 10 balls that are the size of big oranges. 2. Water proportion is 2 cups of water for 1 cup of Ragi flour. 3. Take a wide bottom pan that has lid and take a wooden spatula. This preparation needed 3 cups of water. Pour 2.5 cups of water in the pan. At a time when everything is fast paced, it is important to find our own ways of living and making our next generation aware of our culture. Ragi Mudda/ Ragi Balls

Ragi/Finger millet flour is available widely in India and also in countries like Malaysia/Singapore. This recipe is from Karnataka state of India. Recipes involving Ragi are good for curing/controlling Diabetes. Here is a quick recipe. It took less than 15 minutes to prepare this. Ragi Balls with Brinjal Gothsu Ingredients: Ragi flour- 1 cup Salt- as needed Cooked rice- 1/4 cup Soak Ragi flour in water for about 4 hours.  In a wide bottomed pan, add Ragi Flour batter, add salt and mix well. Add 1 glass of water and cook it. Keep the stove in slow flame, add the cooked rice (mash it before adding). Mix well and add 2 tbsp of oil and keep mixing well. Once all water evaporates, switch off the stove and make the balls. This can be served with Sambar/chutneys.
