Green gram dosa-பச்சை பயிறு தோசை

 மிகச் சுலபமாக செய்யக்கூடிய இந்த தோசை, வயதாகி, பல் இல்லாமல், ஜீரணசக்தி குறைந்தவர்களுக்கு ஏற்றது. தேவையான பொருட்கள் (Ingredients) 3 கப் பச்சை பயிறு (முழுமையாக உள்ள) 6 மேசைக்கரண்டி இட்லி அரிசி 6 மேசைக்கரண்டி கடலைப்பருப்பு  மேலே குறிப்பிட்டப்பொருட்களை நான்கு மணிநேரம் ஊற வைத்து, மிருதுவாக அரைத்தால்,சுவையான பச்சைப்பயிறு தோசை தயார். This is a recipe that best suits kids and elderly who have digestion issues and is soft for those lacking teeth. Ingredients 3 cups of Green gram 6 tbsp of Idli rice 6 tbsp of Channa dhal Soak the above for about 4 hours and you can grind it into a soft batter and make dosa after adding salt. This dosa can be made with or without fermentation.

Tapioca Dosa - மரவள்ளிக்கிழங்கு தோசை

  Last week in my visit to wet markets here in Singapore, a bunch of Tapioca (atleast a kilogram heavy) were sold for less than two dollars and I could not resist the temptation to buy. This dosa was a left over preparation from pre-boiled Tapiocas. Soak two cups of Idli rice and 5 red chillies for 3-4 hours. Grind them in wet grinder together with tapioca and 1/2 cup of freshly grated coconut and salt. Tapioca dosa was very tasty to have without any side dishes.

Sweet Potato Dosai (Sakkaravalli Kizhangu Dosa)

  This is a recipe that was found only by way of a fun experiment. We had boiled nearly 4-5 sweet potatoes (Japan variety) that is purple in color. We then soaked 2 cups of Idli rice and 1/2 cup of urad dhal, 3-4 red chillies, 1 tbsp of Fennel for 2 hours and grinded all together, including the boiled and peeled sweet potatoes. This is a yummy variation and the color is also attractive for the kids to eat. This is best served with a tbsp of Honey.

முக்கூட்டு தோசை (a) Veg. Omlette

Ingredients: 1.Besan- 1 cup 2.Rice flour- 1 cup 3.Maida- half cup 4.Curry leaves 5.Cumin seeds- 1 tbsp 6.Salt and water- as needed 7.Onion and tomatoes- finely chopped ( 2 each) optional 8.Green chillies- 2 finely chopped ( optional) Procedure: 1.In a mixing bowl add all the flour and mix well. Use a whisk or handheld mixer to mix without lumps and get the required consistency. 2.Add salt and water 3.Add the chillies,cumin,curry leaves, onion and tomatoes to the mixture 4.Heat up dosa pan and make a dosa with one laddle of batter. 5.Cook both sides and serve.

Kal Dosa கல் தோசை

Soak 3 cups of Raw Rice (Parboiled Ponni) with 1 cup of Urad dhal for 3 hours. Grind together using wet grinder to a dosa batter consistency. Leave it overnight to ferment. Heat the dosa pan. Add a spoon for sesame oil and spread the oil. Make the dosa using a ladle of batter. Close the dosa with the lid. (No need to turn). Enjoy this crispy variation of dosa.

Winter Melon Dosa

Thanks to Sriram Radhu Maami's Youtube post of Pumpkin Dosa. This is her recipe and I have substituted with Winter Melon. Ingredients: Raw Rice - 1 cup (Soaked in water for 20 mins) Winter melon- 1 cup (Peeled and cut in small squares) Onion- 1 (finely chopped) Tomato -1 (finely chopped) Red chillies-2 Grind all the above ingredients and you can make thick dosas. This breakfast/dinner preparation is a nice variation and it was crisp. You can substitute with Pumpkin or Ridge gourd or Bottle gourd too

Neer Dosa

Neer Dosa is a recipe I picked from a TV show of Mr.Venkatesh Bhat. My mother usually makes Rice Adai. But Neer dosa has more coconut, batter can be watery and it is very soft. Ingredients: Idli Rice: 3 cups Grated coconut: 3/4 cups (I used half of a big coconut). Soak Rice for about 4-5 hours. In a wet grinder, grind the rice and the grated coconut together adding about 1 glass of water. Add required amount of salt and 1 spoon of sugar. This dosa can be made immediately (does n't need fermentation) and can be served with any spicy chutney/sambar/curry. Here, I have shown you with Chettinad Kaara Kuzhambu. Kara Kuzhambu

Fenugreek Dosa (Venthayam Dosa)

Ofcourse, as a South Indian Tamil household, we experiment with Dosas a lot. Here is my last week's breakfast recipe: Idli rice: 3 cups; Full Urad dhal: 3 table spoons; Fenugreek: 3 tablespoons. I soaked all these ingredients above overnight. Fenugreek needs more than 3 hours to soak , so it is better to soak them for a longer duration. Next morning, after grinding these ingredients with a cup of water and adequate quantity of salt, dosa batter was ready. I served this with coconut chutney and sambar. This dosa smells more of Fenugreek and will be fully brown and crisp, if you cook in small flame.

Millet Dosa

Wheat Rava Dosa

My mother made this for dinner recently and this is a yummy variation from the usual kind of dosas. Soak 3 cups of Samba broken rava and 1 cup of raw rice and 1 tbsp of toor dhal for about 3 hours. Grind this mixture adding 1-2 red chillies and add salt. You can make very thin, crisp dosas with this batter.

Rice Dosa

This is a simple dosa, using only Rice. I tried this for dinner yesterday, learnt from my mom. Ingredients: 1. Parboiled Rice- 2 cups (Soaked for 3 hours). 2. Curry leaves- 1 handful 3. Cumin seeds- 1 tbsp 4. Salt as needed. 5. Coconut pieces- 1 tbsp (optional) Rinse the soaked rice and grind adding curry leaves and cumin seeds to dosa batter consistency. Add the coconut pieces and make dosas. This dosa goes well with any chutney/sambar.

Ragi Dosa

One more dosa variety I missed. Ingredients: 1. Rice flour- 1/2 cup 2. Ragi flour- 1.5 cups 3. Channa dhal flour- 3 tbsp 4. Green chillies, curry leaves-lil, jeera- 1/2 tbsp Mix all of the above by hand, so that there are no lumps. You can use butter milk, instead of channa flour also. Add salt. Pre-heat tava and make dosas. These dosas will be brownish in color. Goes well with tomato based chutneys.

Tomato Dosa

Ingredients: 1. Raw rice- 1.5 cup 2. Chopped tomatoes- 1/4 cup 3. Red chillies-4 or green chilli (1 or 2) 4. Toor dhal- 2 tbsp 5. Tamarind- 1 small pinch 6. Salt Soak rice for about 2 hours and grind with all other ingredients adding lil water. Then, make dosas by spreading batter from the corner first and then spread to center. This was our breakfast this morning.

Aapam hai acha hai.. :)-

This is a typical traditional Tamil dish and it is a speciality food served with coconut milk/kadalai curry/ kuruma in the hotels. The shape is like a pan, and it is pure white in color. We need to have a Aappam pan for this (wok with a lid). Ingredients: 1. Raw rice- 2 cup 2. Idli rice- 2 cup 3. Urad dhal- 1/2 cup Soak all the above together for 3 hours and grind adding salt. Then, leave it for about 18-20 hours. Take grated coconut measuring about 1/2 of a medium sized coconut . Grind the coconut in a blender and extract the milk. Add 5 tbsp of sugar, 1/4 tbsp of baking soda and 1 cup of coconut milk to the batter. In a wok, add oil to all sides and pour the batter in the center and quickly hold both ears of the wok and turn in all sides. Cook in low flame, with the lid. No need to turn and cook like other dosas. Once the aapam is cooked, you can easily transfer it to a plate. This was our breakfast this morning and was very good :)-

Simple dosa... Rice+Urad dhal+ Channa dhal..

Soak 1 cup of parboiled rice separately. Soak 1 handful of urad dhal and 1 handful of channa dhal separately. Mix and grind these two and add salt. You can make dosas instantly with this batter. If you cook in low flame and make thin dosas, this will taste great!

Arisi Pori Dosai- Puffed Rice Dosa... Really New...

Hi, I just learnt this from my mom. Soak equal quantity of parboiled rice and Puffed rice for about 1-2 hours. Grind them in a blender, add salt and you can make thin dosas. This dosa can be prepared instantly and you can serve it with any of the chutneys in my blog!

Urgent Dosa

When you dont have time to make dosa batter, you can try this variation also. 1. Rice flour- 1/2 cup 2. Sooji- 1/2 cup 3. Channa flour- 1/2 cup 4. Green chilli- 1 grated 5. Buttermilk- 1 glass 6. Salt- as required. Mix all of the above ingredients by hand, so that there are no lumps. Add lil more water to get to a dosa batter consistency. Pre-heat the tava, and start making dosas. This will taste like Adai!. I tried this last weekend.

Kali kanji dosa... (My mother's creation i guess?)

Ingredients: 1. Parboiled rice - 1 cup Soak and grind the rice in mixie, until it is very soft. Once the contents are transferred to a container, add 1 cup of water and rinse the blender jar. Heat this solution, till it becomes like porridge (Koozh). Add this to the grinded rice. Add salt and make dosas. These dosas will be pure white and will be crisp also. :)-

Rava Dosa (Instant Dosa.. Easy to make)

Ingredients: 1. Rice flour- 2 cups 2. Maida- 1/4 cup (All purpose flour) 3. Sooji (Rava)- 3/4 cup 4. Curd (tangy one)- 1 cup 5. Pepper corns, Jeera and curry leaves (as required). 6. Raw onions- 1 cup Procedure 1.Mix the first three ingredients adding water slowly, so that there are no lumps. 2. Then add the curd and all the other ingredients and salt and keep aside for 30 min 3. Heat the pan, and start making dosas.. Tip: Please start pouring the dough from the corner and then spread to center for making this kind of dosa. Turn both sides and then serve hot with some spicy chutney.

Wheat Dosa.. Godumai Dosa

Good for people with Diabetes. 1.Take 2 cups of atta (wheat flour). 2.Add 1 tbsp of cumin seeds, curry leaves, 2-3 cut green chillies, chopped raw onion ( 1cup), add about 1 cup of Rice flour to this. 3. Add a handful of youghurt. Mix all this well. 4.Preheat tava and start making dosas If you add good quantity of rice flour, you can make crisp dosas. Goes well with Onion/Tomato Chutney
