Ragi Idli

Millet or Ragi has high nutritional value, than Rice. My mother used to buy millet grains, grind them and make halwa :)-. These days, Millet is being used by diabetic people. I tried this recipe for my dear mom, as she is also sweet (with diabetes). Ingredients needed: 1.Millet Flour- 3 cups 2. Urad dhal- 1 cup soaked for 2 hours Grind the urad dhal in wet grinder for 30 minutes. Soak the millet flour in water for 20 minutes and mix both urad dhal and millet flour. Leave aside the batter to ferment overnight and make idlies.

Brown Beans Kuruma

This is a very delicious variation of the usual kurumas. Ingredients needed: Brown beans or Rajma- 2 handful soaked for 8 hours and pressure cooked for 5 whistles Onion- 2 finely chopped Tomato- 2 finely chopped Ginger- small piece grated Chilli powder-1.5 tbsp To grind: Grated coconut- 4 tbsp Roasted gram- 3 tbsp Cinnamon stick- 1/2 Cloves- 4 How to make this Kurma: 1. Grind the ingredients mentioned above to grind without adding water 2. In a pan, add oil and add onion and tomatoes and fry well. 3. Add 1.5 tbsp of chilli powder to this mixture and add the grounded mixture and let all this cook well. 4. Then, add the brown beans and salt and let this boil for 5 mins. Goes well with Naan/Roti

Coconut Fudge , Coconut Burfi the easy way

Coconut Burfi is a common sweet in states like TamilNadu. Ingredients needed: 1.Grated coconut- 1 cup 2.Condensed milk- 1 cup 3.Elaichi or Cardamom powder-1 tbsp 4. Ghee- 4 tbsp Take a thick bottom container and add grated coconut and condensed milk and mix well. Add 4 tbsp of ghee and cook in slow flame and keep stirring constantly. Add the elaichi powder and let this mixture thicken and when its reaching the consistency of cake, transfer the contents to a plate (greased with ghee). Let it cool and cut into square pieces.
