Potato Podimaas- Side dish for Roti/Rice - Indian version of Mashed Potatoes.
Ingredients:
Potatoes: 4
Ginger- 2 tbsp grated
Lemon juice-3 tbsp
Green Chilli- 2 big- finely chopped
Mustard seeds- as needed
Salt and Oil- as needed
Curry leaves- as needed
1. Cut potatoes with the skin, add a small pinch of turmeric and cook in pressure cooker for 3-4 whistles.
2. Peel the potatoes and mash them completely.
3. In a pan, add 2 tbsp of oil, add mustard seeds, ginger, green chillies and curry leaves.
3. Once the mustard starts splattering, add the potatoes and salt and let it all mix well.
4. Add 2 tbsp of oil around the potatoes and close the lid and cook in slow flame for 5-10 minutes.
5. Switch off the stove and add lemon juice and mix well.
