Azhagar Kovil Dosai and Kovil Thayir sadham



For Dosa:
1. 1 cup raw rice (Thai Fragrant rice or any other brand)
2. 1 cup Urad dhal (with black skin)
3. Black pepper- 1 tbsp
4. Cumin seeds- 1 tbsp

Soak the rice and urad dhal separately for 2 hours. Clean the urad dhal but retain half of the black skin of the dhal.

Wash the grinder and grind the urad dhal well. Then add the rice and grind coarsely. Add Black pepper, cumin seeds and salt.

In a pan, add ghee.Once the pan is hot, make dosa using a ladle of batter. Apply ghee around the dosa. Cook in both sides.

For Kovil Thayir Sadham:

1. Cook 1 cup of raw rice (Thai Fragrant rice) with 1 cup of milk and 2 cups of water for 4 whistles in a pressure cooker.

2. Add 1 tbsp of Thick curd, 1/2 tbsp of dry ginger powder and salt.
3. Add 1 tbsp of oil for tempering and add mustard seeds, finely chopped green coriander leaves, finely chopped green chillies.

These two go well with each other and makes delicious dinner combination that is highly nutricious.
