No Onion- No Garlic Lunch Menu (Fada Ni Kichdi/Varagu Curd Rice/Dahi Prata)

On the solar eclipse day (21st June 2020) that coincided with Father's day, Singapore is slowly reopening post COVID 19.

For many months, we have been wearing masks when stepping outdoors and the outdoor activity is restricted to only groceries with just one of us stepping out.

I did want to cook a meal that suits both a young boy of 9 years and also a grandfather who is 8 times his age :).

Yes, we have learnt P3 well during COVID 19 Pandemic and can speak more in Mathematical language of primary school children.

Today's menu is, Fada Ni Kichdi which is made with Broken wheat, Varagu (Kodo millet) curd rice and a wheat based bread (prata) made using curd too.

I have used a variety of spices to make it taste nicer, but have avoided Onion and Garlic.

Here are the detailed recipes:

1. Varagu Curd Rice: Wash 1 cup of millet. Rinse it multiple times. Add 1.5 cups of water and 1.5 cups of milk. This is a total of 3 cups for 1 cup of millet. Pressure cook for 4-5 whistles. For garnishing, I have used  fresh coriander leaves, curry leaves and have add tempered mustard seeds and 1/4 tbsp of dry ginger powder and salt. I have also added about 3 tbsp of curd and served it with pickle.

2. Dahi Prata: To about 3 cups of Wheat flour, I added 1/2 tbsp of turmeric, 1 tbsp of red chilli powder, salt, 4 tbsp of kasuri methi (dry fenugreek leaves), 1 tbsp of coriander powder and around 2 cups of curd.
I mixed the spices by hand with wheat flour prior to adding curd. Add water if you need to. Make thick pratas and use oil for both sides.

3. Fada Ni Kichdi: Soak 1 cup of broken wheat with 1/2 cup of moong dhal for 10 mins. In a pan add oil, mustard, curry leaves, add the soaked mixture (after draining the water). Lower the flame. Add 1/2 tbsp of  turmeric, 1 tbsp of chilli powder, 1 tbsp of garam masala and mix well. Then, add a cup of mix of vegetables of your choice. I added tomatoes, cubed potatoes, long beans. Add salt. Add around 3 cups of water and pressure cook for 3-4 whistles.
