Chidambaram Brinjal Gothsu


 

Ingredients:

Brinjal- 4 medium size, sliced thinly

Tamarind- 1 small lemon size- soak in warm water and use the extract

Coriander seeds- 2 tbsp

Channa dhal- 1 tbsp

red chillies- 4

Jaggery- 1 tbsp

Turmeric- 1/2 tbsp

To saute: mustard seeds- 1 tbsp, fenugreek- 1tbsp, curry leaves, hing (a pinch)

Fry and grind the coriander seeds, channa dhal, red chillies.

In  a pan, add oil and add the ingredients for sauting. then add the brinjals and fry until the brinjals become soft.

Add turmeric and  add the tamarind extract. Let it boil. Then, add the ground mixture.

Add salt, 1 tbsp of jaggery and 2 tbsp of sesame oil.

This is ready to serve.
