Ragi Mudde and Saaru (without onion garlic)

 This recipe of Finger millet balls is from Karnataka, while the Saaru is my own customization.

This is fiber rich and helps to control diabetes





How to make Saaru?

1. Pressure cook a cup of Moong dhal for 4 whistles.

2. In a pan dry roast 1 tbsp of cumin, 1 tbsp of pepper corns, 2 red chillies, 3 tbsp of grated coconut, 1 tbsp of Coriander seeds and blend them in a mixer.

3. Mash the Moong dhal, add the spice mixture and add another 2 cups of water.

4. Add required amount of salt

5. Saute with Mustard seeds and curry leaves.

How to make Finger Millet balls?

1. I took 1.5 cups of Ragi flour to get around 10 balls that are the size of big oranges.

2. Water proportion is 2 cups of water for 1 cup of Ragi flour.

3. Take a wide bottom pan that has lid and take a wooden spatula. This preparation needed 3 cups of water. Pour 2.5 cups of water in the pan. Add 1 tbsp of ragi flour  to the remaining half cup of water and mix without lumps.

4.Add it to the water in the pan and let it come to a boil. Then add the ragi flour slowly and keep mixing with the rod like end of wooden spatula.

5.Add a tbsp of ghee and keep cooking in slow flame. Close the lid and continue to cook until the ragi flour rolls like football and does not stick to the pan.

6. Switch off the stove and keep the pan away from the stove. Take a bowl of water and keep near you. Start making balls.

These are best served with Saaru!
