Kumbakonam Kadappa and Poori

 



Nice Pooris and Kadappa are a grand start to any weekend morning.

To make Poori: (for a family of 5)

  • Wheat flour- 3 cups
  • Maida- 1 cup
  • Sooji-1/4 cup
  • Milk- 1 cup
  • Salt- as needed
  • Oil - as needed

Mix wheat flour, maida,sooji, salt and milk. Heat oil in a pan and add a big ladle of hot oil to the mixture. Mix well and add very less water to make poori dough.

Keep aside for twenty minutes

Kadappa:

  • Onions- 2 big chopped coarsely
  • Greenchillies- 2 big
  • Garlic- nearly 12 pods
  • Moong dhal- 1 big cup
  • Coconut- grated- 4 tbsp
  • Potatoes- 2 
  • Lemon juice- 4 tbsp
  • Fennel-2  tbsp
  • bay leaf- 1

In a pressure pan, wash and cook moong dhal and potatoes adding 3 times water for nearly 5-6 whistles.

Mash the potatoes and moong dhal mixture

In a pan, add 3 tbsp of oil, add the fennel seeds, bay leaf and add onions and fry well.

Add few pods of garlic and add salt.

In a blender, grind coconut, greenchillies, fennel adding water.

Add the mashed moong dhal mixture to the fried onions in the pan. Add the mixture that was just blended.

Add 2 cups of water and required salt. Let it come to a boil.

Add lemon juice after switching off the stove.
