Wheat Rava Dosa

My mother made this for dinner recently and this is a yummy variation from the usual kind of dosas. Soak 3 cups of Samba broken rava and 1 cup of raw rice and 1 tbsp of toor dhal for about 3 hours. Grind this mixture adding 1-2 red chillies and add salt. You can make very thin, crisp dosas with this batter.

Thengai Puli Kozhambu (Kerala Special)

This is an alternative of More Kuzhambu and is done using Tamarind. Ingredients: 1.Coconut-6 tbsp 2.Red chilli-4 3.Fenugreek -1 tbsp 4.Raw Rice - 1 tbsp 5.Some vegetables- Brinjal pieces or Okra pieces 6.Tamarind- 1 small lemon size, soaked in water 7. To saute: Mustard seeds, urad dhal (1/2 tbsp) and a bunch of curry leaves How to make this Thengaai Puli Kozhambu? 1. Boil the vegetables in tamarind water 2. Grind coconut, fenugreek, red  chillies and raw rice and add this mixture 3. Add this grounded mixture and let this come to a boil 4. Saute Mustard, curry leaves and urad dhal and add to this yummy gravy.

Ragi Idli

Millet or Ragi has high nutritional value, than Rice. My mother used to buy millet grains, grind them and make halwa :)-. These days, Millet is being used by diabetic people. I tried this recipe for my dear mom, as she is also sweet (with diabetes). Ingredients needed: 1.Millet Flour- 3 cups 2. Urad dhal- 1 cup soaked for 2 hours Grind the urad dhal in wet grinder for 30 minutes. Soak the millet flour in water for 20 minutes and mix both urad dhal and millet flour. Leave aside the batter to ferment overnight and make idlies.

Brown Beans Kuruma

This is a very delicious variation of the usual kurumas. Ingredients needed: Brown beans or Rajma- 2 handful soaked for 8 hours and pressure cooked for 5 whistles Onion- 2 finely chopped Tomato- 2 finely chopped Ginger- small piece grated Chilli powder-1.5 tbsp To grind: Grated coconut- 4 tbsp Roasted gram- 3 tbsp Cinnamon stick- 1/2 Cloves- 4 How to make this Kurma: 1. Grind the ingredients mentioned above to grind without adding water 2. In a pan, add oil and add onion and tomatoes and fry well. 3. Add 1.5 tbsp of chilli powder to this mixture and add the grounded mixture and let all this cook well. 4. Then, add the brown beans and salt and let this boil for 5 mins. Goes well with Naan/Roti

Coconut Fudge , Coconut Burfi the easy way

Coconut Burfi is a common sweet in states like TamilNadu. Ingredients needed: 1.Grated coconut- 1 cup 2.Condensed milk- 1 cup 3.Elaichi or Cardamom powder-1 tbsp 4. Ghee- 4 tbsp Take a thick bottom container and add grated coconut and condensed milk and mix well. Add 4 tbsp of ghee and cook in slow flame and keep stirring constantly. Add the elaichi powder and let this mixture thicken and when its reaching the consistency of cake, transfer the contents to a plate (greased with ghee). Let it cool and cut into square pieces.

Moong Dhal Thogayal

This is an authentic home made recipe. Very delicious when served with Pepper cumin rasam and papadam. Take 1 cup of moong dhal and roast until there is slight change in the color and soak this moong dhal in water for half an hour. Drain the excess water completely and grind with 4 tbsp of coconut and 1 tbsp of cumin seeds. Add the necessary salt.

Winter Melon Halwa.. (Poosanikaai Halwa)

This is a very special sweet and can be prepared with less effort. Take 1 medium sized winter melon. Peel off the skin and the seed portions and grate it finely. Now,measure this grated winter melon and take equal quantity of milk and sugar. Take 1 pinch of food color; mix it with 3 tbsp of water and keep aside. Now, take a thick bottomed wok and add winter melon and milk and let wintermelon cook in milk in medium flame. Then add sugar and food color and mix well. Now add about 10 tbsp of ghee and keep mixing well. As you keep cooking, this mixture will turn to halwa consistency and the ghee will start separating. You can garnish with cashews and raisins and serve hot/cold. This halwa should be consumed within 1-2 days of preparation.
