Uppuma Kozhakkattai -Yummy!

This is a steamed dish, and is usually not available in hotels. Served with Idli Podi. Ingredients: 1. Raw Rice- 1 cup 2. To saute: Mustard- 1/2 tbsp, 3 red chillies, 1 handful of curry leaves 3. Coconut pieces- 1 handful Rinse the raw rice and set aside for 20 min. Add 1/2 tbsp of salt and mix well. Grind this in the blender until it is in Sooji consistency ( No need to grind to a fine powder). In a pan, add oil, add mustard, red chillies (split into two), curry leaves (tear them before putting). Once these start splattering add 2 cups of water, add required amount of salt. When the water starts boiling, add rice powder and mix well, so that there are no lumps. Once all the water has evaporated, switch off the stove. Once this cools, make balls and steam this for 1-2 whistles.

Rice Dosa

This is a simple dosa, using only Rice. I tried this for dinner yesterday, learnt from my mom. Ingredients: 1. Parboiled Rice- 2 cups (Soaked for 3 hours). 2. Curry leaves- 1 handful 3. Cumin seeds- 1 tbsp 4. Salt as needed. 5. Coconut pieces- 1 tbsp (optional) Rinse the soaked rice and grind adding curry leaves and cumin seeds to dosa batter consistency. Add the coconut pieces and make dosas. This dosa goes well with any chutney/sambar.

Poosanikaai Kootu (Winter Melon Kootu).

This is a simple kootu. 1. Winter melon- cut into small cubes 2. Channa dhal- 2 tbsp 3. Grated coconut-4 tbsp 4. Cumin seeds- 1/2 tbsp 5. Green or red chillies- 3 6. Turmeric powder-1/2 tbsp 7. Salt- as required 8. To saute: Oil, Mustard and curry leaves. Boil winter melon and channa dhal, with 1 glass of water Add turmeric powder and let the winter melon get cooked. Grind coconut, cumin seeds, chillies and add this paste and let this cook well. Add salt. Saute with mustard and curry leaves

Ragi Dosa

One more dosa variety I missed. Ingredients: 1. Rice flour- 1/2 cup 2. Ragi flour- 1.5 cups 3. Channa dhal flour- 3 tbsp 4. Green chillies, curry leaves-lil, jeera- 1/2 tbsp Mix all of the above by hand, so that there are no lumps. You can use butter milk, instead of channa flour also. Add salt. Pre-heat tava and make dosas. These dosas will be brownish in color. Goes well with tomato based chutneys.

Fruits &Nuts in Cream and Honey...

Disclaimer: I picked this from a TV show and yet to try. :)- Ingredients: 1. Cashew- 10 2. Badam- 10 3. Pista-10, Raisins-6 4. Dates- 5-8 5. Apple- 2 (cut into small pieces). 6. Banana-2(cut into small pieces). 7. Green grapes- 2 handful 8. Honey - 4 tbsp 9. Fresh cream- 1 cup. In a pan, heat 3 tbsp of butter. When the butter melts, add cashew, badam, pista and raisins and mix well. Add dates and mix again, then add all the fruits and toss again. Then, add 1 cup of fresh cream and mix well. Then, add honey and mix again. Cool this and serve as dessert.

Kaaradaiyan Nombu Special..

Basic steps for Salt & Sweet Adai: 1. Soak Kaaramani (Brown beans)- 2-3 tbsp for 2 hours and pressure cook this for 1-2 whistles 2. Rice flour- Dry roast till for 3-4 mins. Till the fresh smell disappears. I used the rice flour bought from the shop and sieved after the dry roast. For the Sweet Adai: 1. Measure 3/4 cups of powdered jaggery for about 1 cup of rice flour. 2. Take 1/2 tbsp of elaichi powder. 3. In a pan, add 2 cups of water and add elaichi powder, brown beans and jaggery. 4. Once the jaggery has fully dissolved in water, add the rice flour slowly and stir continuously, so that there are no lumps. Add 4-5 tbsp of ghee at this stage, mix well and switch off the stove, once the water evaporates and you can make balls. 5. Cut the banana/plaintain leaf into smaller parts. Grease the banana leaf with 1-2 tbsp of ghee. 6. Spread ghee in your palm and take small portion of the mixture and spread it in the banana leaf and put one hole with a finger in the center. 7. Steam cook

Mint Pottukadalai chutney... (when chutney jar crashed)!

So far, I did not try grinding Mint with Dhalia (Pottukadalai). My chutney jar crashed and I had no choice but to use the bigger jars. This went well with Idlies today for morning breakfast. Ingredients: 1. Mint leaves- 2 handful 2. Green chillies- 2 3. Dhalia- 1 handful. In a pan, add 1-2 tbsp of oil and add the washed mint leaves. Toss it for a minute and let this cool. Add green chillies, mint leaves and dhalia and grind adding salt. Saute with mustard seeds and curry leaves.

Ilaneer Payasam (Tender Coconut Payasam)

This is a simple payasam with no need to boil. Ingredients: Tender coconuts-2 Coconut Milk- 1 cup Condensed milk (Milkmaid)-4-5 tbsp Raisins, Cashew and Elaichi powder- roasted in ghee. Mix condensed milk, coconut milk and coconut water. Add raisins, cashew and elaichi powder (once they are roasted in ghee). Refrigerate and serve chill
